We’re looking for a Head Chef for our two sushi restaurants — Chemistry Room and Sushi Lab — in Midtown Manhattan . This role oversees both concepts and sets the culinary tone, quality standards, and guest experience across each location. What You’ll Be Doing
Lead sushi and omakase execution across Chemistry Room and Sushi Lab
Create high-quality sushi and omakase dishes that consistently impress guests
Prepare various types of sushi according to established guidelines on quality, portion size, and presentation
Maintain the highest standards of freshness, consistency, and presentation
Oversee kitchen flow, cleanliness, and organization at both locations
Collaborate closely with service teams to ensure seamless operations
Help design seasonal menus and creative new offerings
Engage with guests to create a personalized, memorable dining experience
What You’ll Bring to the Table
3+ years of experience as a Sushi Chef (omakase experience required)
Previous leadership or head chef experience strongly preferred
Strong command of sushi techniques, knife skills, and presentation
Ability to manage quality and consistency across multiple outlets
Calm, focused, and effective under pressure
Excellent attention to detail and pride in craftsmanship
Solid knowledge of food safety and sanitation standards
Positive, guest-focused leadership style
